Seasonal December Recipe: Featuring lemon and jalapeno

- ½ dozen - 1 dozen fresh oysters
- 1 lemon, cut into wedges
- ¾ cup red wine vinegar
- 2-3 stalks scallion
- ½ jalapeno pepper
- 1 tsp sugar
- Salt & pepper to taste
- Crushed ice
Optional: hot sauce
Make the mignonette by very finely chopping 2-3 stalks of scallion and half a jalapeno. Add into a mason jar.
- Add ¾ cup red wine vinegar, sugar, and salt and pepper to taste. Let sit for at least 15 minutes to develop flavor.
- Carefully shuck the oysters, leaving them on the half shell.
- Serve with a side of mignonette and lemon wedges. Optional - add a dash of hot sauce
